Sausage Boursin Pasta
This easy cheesy pasta meal is the type of meal that makes you want to snuggle up on a cold night, yet has enough sophistication for serving at your next dinner party.
Ingredients Needed For This Meal
So to make Sausage Boursin Pasta, the ingredients are just a few!
Sausage: I used hot Italian sausage here but you can use a milder sausage to fit your own personal preferences. Using a loose sausage is easiest but if all you have on hand are sausage links (sausage in casings), simply remove the casings and saute the meat from that point on.
Boursin Cheese: Garlic and Herb Boursin cheese takes the center stage in this sausage Boursin pasta dish, making this a great way to get the full effect of the flavor if you are new to using this cheese in your meals. If you can’t get your hands on any Boursin, I have a recipe on how to make your very own Boursin type cheese that’s super easy! (You would just change the seasonings to suit this dish 🙂 )
Sweet Peppers and Onions: You can use any color of sweet pepper that you’d like, as well as any regular onion will do for this cheesy sausage pasta recipe.
Mushrooms: I also had these on hand and thought they’d go wonderfully with this recipe. If you’re not a fan of mushrooms, feel free to leave them out. And if you’re a fan of mushrooms, I made a Sausage and Mushroom Pie that is AMAZING! (If I say so myself…. but really. It’s fantastic.. lol!)
Milk or heavy cream: Milk (or cream if you want it more decadent!) help loosen the cheese and make it into a sauce. Also, you can always add a bit more cream if your sausage ends up being too hot for you, to help balance out the dish a bit more without sacrificing the flavor.
Pasta: You can use your favorite pasta shape here, but I used regular spaghetti. Other great choices could be rotini, bowties, and even macaroni! Also, consider using a whole wheat version of the pasta for extra added nutrition.
Seasonings: Salt, pepper, and a tablespoon or so of cooking oil to fry the veggies in.
Making it Right
Making this sausage Boursin pasta is easy enough for weeknights because it takes hardly any time for it to all come together and it’s practically made in one pot.
Start water boiling for your pasta so it will be done by the time your base is. Saute the peppers and onions in some oil. When they are softened, add sausage until it’s cooked through. Drain any grease that may have accumulated.
Add the mushrooms and continue to saute until the mushrooms have released their liquid and shrunk in size.
Slowly add chunks of Boursin cheese mixing until it has melted into a thick mixture. Once your cheese is melted you can add milk or cream slowly a little at a time until it is smoothly blended leaving a sauce that is a light creamy consistency.
You can choose to use chicken broth in place of the milk and cream if you would like to cut some of the dairy or add a new flavor to explore when making this sausage Boursin Pasta. The sauce should be creamy and somewhat loose, not thick and stodgy.
After your sauce is a complete mix in your favorite pasta. This can be simple spaghetti or a favorite like rotini. Serve this dish right away while it is hot and steamy for the best flavor and texture.
Additions and Substitutes
If you want to add even more of a kick, add a sprinkling of dried chili flakes or some fresh red hot pepper.
Adding some frozen corn or peas to the mix will also tame down some of the hot seasonings as well and add bulk to the dish so it will feed more people.
If you don’t have any milk or cream on hand to thin out the cheese, the next best substitution would be chicken broth or even use some pasta water that you cooked the noodles in.
Refrigeration and Freezing
If you plan on eating the entire dish at a different date (making it in advance), keep the sauce and pasta separate from eachother until you are ready to serve. This will prevent the pasta from soaking up too much of the sauce while sitting in the fridge.
If you’re reheating the dish from leftovers, place it in the fry pan and add more milk, cream, chicken broth or water, to loosen up the mixture and make the dish saucy again.
Freezing the leftovers is also a great option. The leftovers will stay good in the freezer for up to three months. To reheat the leftovers, thaw, and follow the reheating instructions above.

SAUSAGE BOURSIN PASTA
Savory, creamy and easy to make, this Sausage Boursin Pasta dish will quickly become a weekly staple!
Ingredients
- 13 ounces hot Italian sausage (see notes)
- 8 ounces dry pasta
- 1 sweet pepper, diced
- ½ onion, diced
- 8 ounces mushrooms diced (optional)
- 5 ounces Garlic and Herb Boursin cheese
- 1 cup milk or cream (see notes)
- salt, pepper
- Oil for frying
Instructions
- Heat water to boiling and add your pasta to start cooking.
- Saute the peppers and onions in the oil
- When tender and translucent, add the sausage. Cook through till browned.
- The pasta may be done at this point. Taste for doneness and drain if it's ready. Set aside.
- Add the diced mushrooms. Sprinkle a pinch of salt over the mushrooms to encourage them to lose the water content. Saute until soft and wilted.
- Add the cheese in chunks. As the cheese melts, add the milk or cream in small increments until you've reached the desired sauciness you'd prefer. (see notes!)
- Add the pasta to the dish and toss to coat everything with the cheese sauce. Taste for seasoning, add extra salt and pepper if needed.
- Serve and enjoy!
Notes
If you have sausage in the casings only, split open the sausages and remove the casings. Or, you can cook the sausages as is, and then remove from the pan, slice into medallions and add them back to the fry pan.
