Easy Mint Brownies
If you love mint and chocolate combos, these easy mint brownies are the ticket for you. Rich chocolatey chocolate, fluffy green minty frosting with crumbled mint chocolate candy bars plopped on top, these brownie bars are a mint chocolate lover’s dream come true.

I made these using a ready brownie mix, which is why they took just minutes to prep. If you’re proud of your homemade brownie mix or just want to stick avoid pre-made mixes, you could totally do that as well.

I just used a boxed mix because that makes things so much easier, and is perfect for when you want to whip up a quick dessert on a whim!
Enough said. Let’s dive right into the recipe shall we?

Easy Peasy Chocolately Mint Brownie Bars = EASY DELICIOUSNESS!!
What Will You Need To Make These Brownie Bars?
Apart from a brownie mix of course, you’ll need a minty addition to go along with it. For this recipe, I used Aero Peppermint Bars, which are a Canadian chocolate bar.

They taste amazing when teamed up with the dense and dark chocolate brownies, but if you don’t have access to these, you can always use Andes Mint Bars instead- they work equally well too.

I also used a bit of food coloring and some store-bought buttercream icing. Hey.. don’t come at me for it – I said this recipe is SUPER EASY, right? 😉
For this minty brownie bars recipe, I also added a tiny bit of mint extract to the icing. I didn’t want to add it to the brownie portion because then it would just be too much. Remember that mint is a strong flavor, and it can quickly overpower and mask all the other flavors.

How Far Ahead Can I Make These Brownies?
You can make the brownies a day or two beforehand. You can shave/chop the chocolate and keep it in an airtight container in the fridge for up to a week. The frosting can also be colored up to a week beforehand and kept in an airtight container. Then, all you have to do is assemble and serve when you’re ready!

What’s the Best Way to Store these Mint Brownies?
Storing these brownie bars is super easy. Just pop them into an airtight and refrigerator safe container and that’s it! Make sure you cover them well- a lid on top is a must, otherwise, the brownies will dry out and become tough.
You can also freeze the brownies- just layer them in a freezer-safe container and they should stay good in there for up to 3 months. To thaw, simply leave them at room temp to thaw.

Serving Suggestions & Ideas For These Easy Minty Brownie Bars
The best part about these brownie bars is that they are super versatile. You can have them as is, or team them up with a scoop of vanilla bean (Or chocolate!!) ice-cream.

If you’re a chocolate addict, a handy little tip is instead of using a vanilla buttercream, you can use a chocolate buttercream instead and make them triple chocolate!!!

(Pssst – try heating them ever so slightly in the microwave. The chocolate may melt a bit, but it all tastes the same! Serving warm brownies with ice cream – ohmygoodness!!)

And if you’re looking for a bit of crunch as well, throw in some pecans, walnuts or hazelnuts into the brownie mix or even sprinkle some on top with the candy bar topping.
You’ll want to ice these brownies when they are completely cool. Remember, icing and heat = pooled, melty icing. Still delicious, but not what you want on top of these brownie bars, ha!!

Easy Minty Brownie Bars
These Easy Minty Brownie Bars have everything you want in a decadent AND EASY brownie recipe! Rich chocolate flavors mixed with milk chocolate & mint, minty buttercream, and then sprinkled with even extra chocolate on top!
Ingredients
- 1 box of your favorite brownie mix
- 4 Peppermint Aero Chocolate Bars (see notes)
- 1 small tub of Buttercream frosting/icing
- 1/4 tsp peppermint extract
- Green food coloring
Instructions
- Chop up two of the peppermint candy bars into small chunks. Set aside.
- Preheat the oven to the temperature on the back of the brownie box.
- Prepare the brownies according to the back of the box. Before the brownies go in the baking pan, fold in the chopped candy bars into the brownie batter.
- Bake.
- Remove from the oven and let them cool completely before proceeding.
- In a medium bowl, remove the icing from the tub and add it to the bowl. Add the peppermint extract and mix. Tint the icing with green food coloring. Mix everything well.
- Dollop and spread out the icing on top of the brownies. Smooth out well.
- With the remaining two candy bars, chop them up into finer pieces and sprinkle them on top of the frosting on the brownies. Enjoy!
Notes
If you are using Andes mint chocolates or something else in place of the Aero bars, you'll want about 6oz of thin mints... or more, depending on how much you really like the flavor combo!
