Honey Roasted Rainbow Carrots

These honey roasted rainbow carrots have the perfect balance of sweetness and warm flavors and can be a total star on the dinner table. 

The earthiness from the ginger beautifully complements the sweetness of the carrots, and they both come together in a gorgeous honey glaze before being roasted to that stunning caramelized perfection. 

I routinely make these hot honey carrots, and it wouldn’t be wrong to say I’m mildly obsessed with them. 

These are just a step up, and the fact that they take just minutes of prep time to make is really the best!

Honey ginger carrots are so easy to make!

Ingredients for these colourful carrots with honey

Rainbow carrots: I used rainbow carrots because I had those at hand. You could also use baby carrots or even regular carrots cut into pieces. 

Honey: Honey lends a beautiful sweetness and creates a nice sticky glaze around the carrots. 

Ginger paste: I used ginger paste to lend the carrots that distinct ginger kick of flavor. Ginger powder can work too, just make sure you use a little because it can be quite intense. 

Thyme: A little sprinkle of thyme can help bring out the flavors of the dish even more. If you don’t have thyme, you could use rosemary instead. 

Garlic powder: I also added a dash of garlic powder. You could, of course, use fresh garlic too. 

Salt & pepper: And of course, to season, I kept it simple and used just salt and pepper.

How to Make Honey Roasted Carrots

  1. Preheat the oven and prepare a baking sheet. 
  2. Cut carrots. Toss them in a mixture of all the remaining ingredients. 
  3. Arrange in an even layer on the baking sheet
  4. Roast until slightly golden 
  5. Garnish and serve 

Tips & Variations for this Roasted Carrots with Ginger Recipe 

  • To make a vegan version of this recipe, swap the honey with some maple syrup. 
  • You can also add a dash of brown sugar into the mixture to bring some beautiful caramelization and char on the carrots. 
  • To bring a bit of variety, you can also use other root veggies like beet and sweet potato in addition to the carrots. 
  • If you find the honey you’re using is too thick, pop it in the microwave for 5 seconds, or submerge the *sealed* bottle in hot water for a few minutes to warm and loosen up.

Serving the Roasted Carrots

These cooked carrots can be a stunning side dish to any of your Thanksgiving, Easter or Christmas mains. Now that I think about it, they’ll go any time, even a busy weeknight supper.

With its versatile flavors, you can team it up with pot roasts and practically any main dish of your choice. 

And if I happen to have a few extra raw carrots at hand from the bundle I bought, I usually use it to make my favorite brown sugar honey glazed carrots or my maple cinnamon Instant Pot carrots

The Second Act Recipe

Do you have leftovers? You could use them up by making:

  • A rainbow carrot soup
  • Use them as a chilled topper on a salad with chicken.
  • Chilled topped with feta cheese, cranberries and toasted almonds as another side dish for a different night.
  • Another great idea is to chop the carrots into smaller chunks, add in other veggies and toss everything together with some cooked rice to make a nice fried rice dish!

Storage Ideas & Suggestions

These honey ginger carrots will hold well in a covered container in the fridge for up to 3 days.
I haven’t frozen these roasted carrots in one container, but I’ve made up individual dinners and used the leftovers as the side to some chicken dinners I made. They thawed nicely (not like you made them fresh, but still nice) and reheated fine.

Questions You May Have

Should I use baby carrots or regular carrots for roasting?

You can use either one you prefer. Sometimes baby carrots have a higher moisture content than regular carrots and may take a little longer in the oven to achieve that caramelized flavor.

Do rainbow carrots (deep purple,yellow,etc) taste different than orange carrots?

Believe it or not, they sure do! Purple carrots tend to be a bit sweeter than let’s say yellow carrots. Yellow carrots can have more of an earthly flavor than the other carrots. They’re all delicious though!
