Easy Peanut Butter Butterscotch Bars (No-Bake!)

This No-Bake Peanut Butter Butterscotch Bars recipe is basically the culinary equivalent of finding a $20 bill in your pocket. You know, that “holy crap, my day just got 100% better” feeling? Yeah, that’s these bars. We’re talking a thick mix of crunchy peanut butter, glossy butterscotch, and pretzels that hit that sweet-salty spot perfectly.

Forget the oven; it’s a stay-cool-and eat-snacks kind of day. If you can stir a bowl and wait an hour without losing your mind, you’ve mastered this.

It’s easy dessert is no-fuss, heavy on the flavor, just like my super popular Twisted Scotcheroos and hey… let’s be real – a yummy creamy crunchy sweet and salty snack is perfect ANY day!!

✅ Graham Cracker Crumbs – If I don’t have the actual crumbs on hand, I’ve used a graham pie crust and crumbled that up! It’s a great little hack so you have exactly what you need on hand!
✅ Peanut Butter – I’m a crunchy fan for that extra bite, but creamy works if you prefer things smooth.
✅ Butter – Real butter is king here, but margarine works if you’re in a pinch.
✅ Powdered Sugar – Use this for a silky filling. Regular sugar works but might leave things a little “sandy.”
✅ Butterscotch Chips – Our golden topping. We melt these with a splash of PB so they don’t turn into a brick when chilled.
✅ Pretzels – These provide that elite salty crunch. Press them on top or smash them inside if you’re feeling wild.

How to Make Peanut Butter Butterscotch Bars

  1. Line an 8×8 pan with parchment, leaving some overhang for easy lifting later.
  2. Stir the crumbs and melted butter, then press the mixture firmly into the pan and chill.
  3. Mix the peanut butter, powdered sugar, and more melted butter until thick; spread it evenly over your chilled crust.
  4. Zap the butterscotch chips and peanut butter in the microwave until smooth.
  5. Pour that liquid gold over the peanut butter layer, smooth it out, and press your pretzels into the top.
  6. Put it in the fridge. Once firm, lift the whole block out and slice.

Serving Tips & Variations

  • If you think the whole pretzels on top are too dainty, crush about a cup of them and fold them directly into the peanut butter layer. 
  • Not a huge butterscotch fan? (Who are you?!) You can swap the chips for dark chocolate for a “Grown-Up Reese’s” vibe.
  • Sprinkle some flaky sea salt over the butterscotch before it sets. It makes them look fancy enough for a potluck and cuts through the sugar.

Storage and Freezing

Leftovers? What are those? Okay, if you actually have self-control, these stay great in the fridge for up to 5 days. Just keep them covered so they don’t start tasting like the onions in the crisper drawer.

These freeze like a dream for up to 2 months! When the sugar-deprived trance hits, just pull one out and let it thaw in the fridge or give it a few minutes on the counter.

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ¾ cup unsalted butter, melted (divided: ½ cup for base, ¼ cup for PB layer)
  • ¾ cup crunchy or creamy peanut butter
  • 1 cup powdered sugar
  • 1 ½ cups butterscotch chips
  • 2 Tbsp creamy peanut butter (for topping)
  • 20 - 24 pretzel twists

Instructions

  1. Line an 8x8 pan with parchment paper.
  2. Mix graham crumbs and melted butter; press into the pan and chill for 10 minutes.
  3. Stir peanut butter, powdered sugar, and melted butter until thick; spread over the base.
  4. Microwave butterscotch chips and 2 Tbsp Peanut Butter in short bursts until melted; pour over the bars.
  5. Press pretzels on top and chill for 1 hour until firm.
  6. Lift, slice, and devour. (Wipe your knife between cuts for those pretty edges!)

Notes

  • Let the pan sit out for 5 minutes before cutting so the topping doesn't crack.
  • Use crunchy Peanut Butter for more creamy for a traditional melt-in-your-mouth feel.
  • If whole pretzels are not your thing, just crush a handful and sprinkle them over the top!
