Instant Pot BBQ pork with onions is a classic dish. Usually done in the oven, it would take forever to cook, and you had to watch it, so it didn’t burn. With the solution of the instant pot, not today, my friends!
What Cuts Of Pork Can I Use For This Dish?
Pretty much any cut you prefer, actually. However, there will be some cuts that work better with this dish than others. You could use cuts such as:
- Boneless loin chops (which I used today)
- A loin roast that you cut up yourself
- Pork steaks
- Pork leg (but only if you have a small section, as pork legs are usually quite big)
- You wouldn’t want to use
- Pork shoulder roast (unless you’re ok with the meat going into a pulled pork type texture, then that’s great!)
- Pork belly
Directions For How To Assemble The Instant Pot BBQ Pork Freezer Meal:
1. In a large bowl, combine the cubed pork, garlic powder, salt, and pepper. Mix all ingredients together, and transfer to an 8 x 7-inch freezer bag. Seal the bag removing as much air as possible.
2. Using a mandoline, or a sharp knife, carefully slice the onions into thin slices. Separate into rings. Place into another 8 x 7 freezer bag. Seal the bag.
5. Group together all the smaller freezer bags and place into a larger gallon-sized freezer bag. Add the printed recipe into the bag as well for reference.
6. Freeze for up to 3 months.
For easy reminders, you can also print out the recipe and include that in the big container bag when assembling the meals, so that the printed recipe can be re-used again the next time you make the freezer meal, and the cooking instructions are right there, handy as well!

Directions for Cooking The BBQ Pork From Fresh
Add the (fresh – non frozen!) pork, onions, and broth to the Instant Pot and add the chicken broth or water.
Move the toggle switch to “sealing.”
Cook on manual high pressure for 5 minutes. Do a natural release for 5 minutes. Release any steam. Drain the cooking liquid. Add the BBQ sauce. Mix and serve!

Cook on manual high pressure for 15 minutes. Do a natural release for 10 minutes. Release any steam. Drain the cooking liquid. (Internal temperature of pork should be 145 degrees Fahrenheit).
Add the BBQ sauce. Combine well.
**Note: Expect the pot to take a longer time to come to pressure before cook time begins.

Directions for Cooking Instant Pot BBQ Pork With Onions In The Slow Cooker
Thaw the bags of ingredients in the fridge the night before.
Add all ingredients to the slow cooker bowl except the bbq sauce. Cook on high for 5-6 hours or low for 7- 8. (Internal temperature of pork should be 145 degrees Fahrenheit)
Drain the cooking liquid and then add the barbeque sauce. Mix well and serve.

How Long Will This Pork Dish Be Good For In The Freezer Meal Bags?
As long as the ingredients are placed in freezer ready (quality) bags or containers, the meals should last up to 3 months!
What Else Can I Use As The Pressure Cooking Liquid For This Instant Pot BBQ Pork Dish?
You could use chicken broth, veggie broth, pork broth, pho broth in a pinch. They will all add extra flavor, but water works well too.
Tips and Tricks For Making BBQ Pork An Excellent Dish
A good tip is to double the recipe ingredients and make TWO freezer meals at one time, or freeze one meal and make the other for dinner that night!
Adding extra ingredients such as sliced carrots, celery, and peas can stretch the servings of this dish.
Use your very favorite BBQ sauce for this dish. Usually, something with a sweeter flavor to the sauce goes well with onions and pork.

Simply replace the bbq sauce with a sugar-free sauce. You could also switch up the rice and serve on cauliflower rice or a cauliflower mashed potatoes.
Can I Refreeze The Cooked Leftovers?
Sure can! Up to a month in the freezer would be fine. This only applies to cooked leftovers. Please do not thaw the RAW frozen meal, and then refreeze.

INSTANT POT BBQ PORK WITH ONIONS
This instant pot bbq pork with onions recipes are savory, tender and delicious. AND it was made right from frozen! You can make it fresh as well, but this recipe shows you how easy it is to make convenience freezer meals for those busy weekday evenings!
Ingredients
- 1 ½ lbs boneless lean pork (I used loin chops)
- 1 large onion, sliced
- 2c favorite bbq sauce
- 1c water or chicken stock
- as desired, garlic powder, salt and pepper
Instructions
- Season the pork and add it to the instant pot insert bowl.
- Sprinkle the onion slices over top the pork, and add 1 cup of broth or water
- Place the lid on the instant pot, turn the toggle switch to "seal"
- Cook on manual, high pressure for 8 minutes.
- Do a natural release for 5 minutes. The internal temperature of the pork should be 145 degrees Fahrenheit
- Drain the cooking liquids from the pork.
- Add the bbq sauce and stir well.
- Switch to the saute button and heat the sauce up to boil while stirring.
- Serve and enjoy!

In the body of the recipe, under Cooking the Barbecued Pork from Fresh it says to cook it for 8 minutes. In the recipe card portion it says to cook 5 minutes if fresh. Which is correct? And would it be the same if using pork shoulder?

That was a typo, thanks for pointing it out. It would be the same for pork shoulder as well, as the cubes would all be the same size, regardless of what cut of pork it would be.
