Frosted Strawberry Pop Tarts from scratch might seem intimidating but honestly, they’re simple as pie.
However, if you’ve been following the blog for a while, you’ll have read where I’ve said I’m not the most ambitious baker in the world. But, once in a while, I can get a little motivation to make things from scratch like my Cheddar N’Dill Bread, my 3 Ingredient Rhubarb Cake, and these homemade strawberry pop tarts.
Easy Homemade Air Fryer Strawberry Pop Tarts
Well, first of all, it’s hard not to love any time of pop tart, am I right? I like almost any form of pop tart or pastry turnover, etc. I’ll make different ones like my Easy Sour Cherry Hand Pies, and even a savory Beef Hotpocket!
I like to make them in the oven or the air fryer because they’re easy, and quick and even a beginner cook/baker can make them.
I’ll bet that when you make these, you’ll see that they are much better than anything you can find at the supermarket.
Ingredients And Substitutions
Super easy ingredients to find at practically any grocery store.
Strawberries – The filling for these homemade pop tarts use strawberries but you can use any berry or fruit like cherries or apples to flavor your pop tart filling. Alternatively, you can substitute chunky fruit jam.
White sugar – This ingredient mixes with the berries to make the sweet filling. You can substitute this with your favorite alternative sweetener to reduce the sugar. This is great for those looking for a way to reduce their sugar intake.
Packaged pie crust – As an alternative, you can opt to make your own homemade pie crust for your homemade pop tarts.
Powdered sugar – This is used to make the topping. You can easily replace this with a sugar alternative or make your own with a blender.
Lemon juice – Lemon juice is used in this recipe to mix with powdered sugar to make the glaze topping. You can alternate this with your favorite juice or a bit of vanilla extract and water to adjust the flavor to fit your preference.

Step 2: Roll out your crust and trim it into a large square before cutting it into 4 smaller squares.
Step 3: Spread 1 tablespoon of filling into the center of 4 squares.
Step 4: Add a 2nd square on top and use a fork to press down each edge to hold them together and create a decorative edge.
Step 5: Preheat your air fryer to 350 degrees while you spray the front and back of each pop tart with oil.
Step 6: Cook in the air fryer for 7-10 minutes until the crusts are a nice golden color.
Step 7: Remove with tongs and place on a cooling rack until completely cooled. About 30-45 minutes.
Step 8: Mix together lemon juice and powdered sugar to create your icing.
Step 9: Drizzle the icing over each pop tart adding sprinkles before the icing sets.
Customizing Your Homemade Pop Tarts
This recipe is amazing to customize and you can use it to make your own flavors by simply switching up some ingredients. The filling on these pop tarts uses fresh strawberries but they can easily be substituted for any berry you prefer.
Don’t think you have to stop at fruit fillings! Other great options are creamy custards and nut (hazelnut) spreads.
Serving, Storing and Freezing
These homemade pop tarts are great for serving with pretty much any breakfast or brunch fare.
- Scrambled eggs (or any cooked eggs for that matter)
- Bacon or Sausage (the sweet and savory flavor mix is super tasty!)
- Yogurt, oatmeal, porridge, etc.
- Fresh fruit of any variety.
These little toaster pastries are great for storing in the refrigerator in an air-tight container for 3-4 days. If you want to keep them longer you can easily toss them into the freezer and heat them in the air fryer when you are ready to eat them.
Simply preheat your air fryer to 350 degrees and run through in a single layer for 3-4 minutes and your pop tart will taste as fresh as the day you made them. Use within 2-3 months.
