Easy 2-Ingredient Cinnamon Roll Apple Cobbler (So Cozy & Quick!)

When I’m craving something warm and comforting – but also feeling too lazy to do anything complicated – this Cinnamon Roll Apple Cobbler is my go-to. It’s ooey-gooey, packed with cinnamon-spiced apple goodness, and finished with that sweet icing drizzle.

2 ingredients and about 30 minutes, this is the perfect dessert to whip up when you want your house to smell amazing, when you want some warm cozy vibes, and when someone asks you to bring dessert after the pumpkin patch visit.

Similar to my slow cooker apple blueberry cobbler, you know I like to use shortcuts in my recipes for those sweet lazy days. Only two easy ingredients, it’s super easy to whip up in a flash, or if you’re feeling momentarily inspired, you can add a few optional ingredients to zhuzh it up a bit.

🛒Ingredient Highlights

  • ✅Refrigerated Cinnamon Rolls – I used Pillsbury brand. Choose the 8-count rather than the “grand” size. Store brands will work as long as they are about the same weight tube.
  • ✅Apple Pie Filling – A 20 – 24 ounce can is what you want.

🔥 Important Things To Know About This Recipe

  • Don’t overcook the dessert. If it’s overcooked, the pieces of cinnamon roll on the top of the dessert could get hard and feel like eating rocks.
  • If the tube of cinnamon rolls that you buy doesn’t come with icing, no worries! It’s easy as pie to make your own icing drizzle by combining 1 cup of powdered (icing) sugar with 2 – 3 tablespoons of milk or cream. This reduces down to about a 1/2 cup of drizzle to put over top the dessert.
  • I like to take a knife and cut the slices of apple pieces in the can so there’s better apple distribution all over the cobbler.
  • A larger baking dish is key rather than using a smaller one because you’ll get an even bake.
  • About the drizzle – if you let the apple cobbler cool a bit before drizzling, it will not melt or puddle. If you drizzle while it’s hot, it will melt slightly and puddle on the top. Not a big deal either way; it’s all esthetics, and it tastes delish either way!

My recipe for Cinnamon Roll Apple Cake is just like this cinnamon roll apple cobbler; epic served with ice cream! Vanilla is great, don’t get me wrong, but try a vanilla caramel swirl, or well, come on, actually any type of ice cream is chef’s kiss with this dessert.

Sprinkle some candied nuts or, even better, some sweet and spicy pecans – wholly macaroni! Apple Cinnamon Roll Cobbler Recipe

Warm, gooey, and packed with cozy cinnamon-spiced apples, this 2-ingredient Cinnamon Bun Apple Cobbler is the ultimate low-effort, high-reward dessert. Just toss together store-bought cinnamon rolls and canned apple pie filling, bake, drizzle, and devour!

Ingredients

  • 1 can (24 oz) apple pie filling
  • 1 can Pillsbury cinnamon rolls (not Grands), with icing packet
  • OPTIONAL ICING:
  • 1 cup powdered sugar
  • 2–3 tbsp milk or cream
  • Dash of vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease an 8x8 or 9x9-inch baking dish. Set aside.
  2. Open the cinnamon rolls and set aside the icing.
  3. Cut each cinnamon roll into quarters and add them to a medium sized bowl.
  4. With a knife, cut any long apple slices into pieces.
  5. Add the cinnamon roll pieces to the bowl and gently stir to combine.
  6. Transfer the mixture to your prepared baking dish and bake uncovered for 25-30 minutes.
  7. Check for doneness. (Use an instant-read thermometer to check the center of a doughy piece—you're aiming for 190 - 200°F (88 - 93°C) to make sure they’re fully baked.)
  8. Cool slightly, then drizzle with the reserved icing. Serve warm and enjoy!

Notes

💡 Recipe Notes:

  • You can use one can of cinnamon rolls for a more apple-forward cobbler or two cans for a breadier dessert. Adjust baking time by adding another 20 minutes.
  • If you use the actual Pillsubry brand, make sure to use the regular-sized Pillsbury cinnamon rolls (not the Grands or jumbo versions), or the dough-to-fruit ratio may be off.
  • If your apple pie filling has huge slices, give it a rough chop for easier mixing and more even apple coverage.
  • Cut the cinnamon rolls into quarters to ensure they bake up golden and fluffy all the way through.
  • Check doneness by inserting a thermometer into a doughy section—you're aiming for an internal temp of 190–200°F.
  • If the top is browning too fast before the middle is done, tent it loosely with foil during the last 10–15 minutes of baking.

❄️ Storing & Reheating:

  • Store leftovers in the fridge, tightly covered, for up to 4 days.
  • Reheat individual servings in the microwave for 20–30 seconds until warm and gooey again.
  • Not ideal for freezing (the texture gets mushy), but I doubt you’ll have leftovers anyway!

🍭 Optional Icing Drizzle:

  • If the cinnamon dough tube didn't come with icing, you can easily make your own. Whisk 1 cup powdered sugar with 2-3 tbsp milk or cream until smooth. Add a splash of vanilla if you’re feelin’ fancy. Drizzle over the warm cobbler.
