Okay, real talk: some nights you want a fancy pasta dinner, and some nights you want to eat standing over the stove in your socks. This recipe is for both of those nights.

It’s creamy, it’s garlicky, it’s got just enough lemon to make you do that little dance when you taste something amazing, and it’s on the table in 15 minutes. No simmering for hours, no ingredient list a mile long, no calling your mom to ask what a roux is.

Just butter, garlic, lemon, cream, and pasta, doing exactly what they were always meant to do together. Let’s get into it.

🌟 Ingredient Notes

When I want a cozy, hearty pasta dish (that’s just as easy) I’ll make my sausage boursin pasta, but tonight is all about a dinner that feels bright, snappy, and ridiculously easy. Let’s cook!

A flat lay of raw pasta ingredients, including butter, garlic, a lemon, butter, cream, and dry noodles on a counter.

The Pasta –  Skip the cheap box. Go for high-quality, semolina-based pasta like linguine or spaghetti. Semolina has a rougher texture, meaning the sauce actually clings to the noodles instead of sliding off into a sad puddle.
Real Garlic – Use actual cloves not the powder, if possible. If it’s only powder you have, use it – the garlic flavor here is an absolute must so don’t skip it my friend!
Butter – Another player in the recipe that shouldn’t be skipped. Yes, butter is fat, but it’s also flavor. It’s not a lot, but it makes a difference!
Heavy Cream – Do not skimp and grab half-and-half or milk. THIS dish needs the richness and mouthfeel you get from using heavy cream. It’s only a few ingredients in this dish, so you want to max the flavor in every way.
Parmesan – Throw away the shaker with the green lid for tonight! Grate real Parmesan right from the block for maximum umami flavor gloriousness.
Lemon – You need both the zest and the juice, so buy an actual lemon, not a plastic squeeze bottle.
Onion – I used some thinly sliced green onion but I’ve also used regular yellow or white onion as well. Use what you have on hand.
Red Chili Flakes – This zesty little ingredient is OPTIONAL. If you don’t like much heat, leave it out. If you’re a pepperhead, fill your boots!

How to Make Lemon Garlic Pasta

1. Boil your semolina pasta in heavily salted water.
Crucial rule: scoop out a cup of that starchy pasta water before draining. It’s liquid gold for fixing your sauce later.

2. Melt your butter over low-medium heat in a large pan. Toss in the onion, minced garlic, red chili flakes, and lemon zest. Let it get fragrant for about 2 minutes and don’t let the garlic burn unless you like bitter dinners!

3. Dump in the cooked pasta and pour over the heavy cream. Toss like wild. If it looks too thick, splash in some of that reserved pasta water to silky it up.

4. Stir in the lemon juice and grated Parmesan. Toss until a glossy sauce forms, season with salt, pepper, and fresh basil if you want, and serve immediately.

❓ Frequently Asked Questions

Why did my sauce curdle?

You probably added the lemon juice directly to the hot cream over high heat, or you used a low-fat dairy sub. Keep the heat low, use real heavy cream, and stir the lemon juice in right at the end to keep things smooth.

Can I use bottled lemon juice?

You can, but in my experience, fresh is best for this pasta dish. Plus, you need the fresh zest from a real lemon to get that signature punchy flavor without making the sauce overly sour.

What does pasta water actually do?

The starch left behind in the water acts as an emulsifier. It binds the fat (butter and cream) to the liquid, turning a greasy pan into a cohesive, velvety sauce.

Storage and Reheating Lemon Garlic Pasta

  • In the Fridge: Keep leftovers in an airtight container for up to 3 days.
  • How to Reheat: Cream sauces get stiff and separated in the microwave. Reheat it in a skillet over low heat with a splash of milk or extra cream, stirring constantly until it comes back together.

This is the low-stress luxury meal when you want maximum flavor with zero fuss. It’s bright, rich, and comes together faster than delivery. Whip it up tonight, show off a little, and don’t forget to leave a star rating below so I know how much you loved it!

Ingredients

  • 10.5 oz linguine or spaghetti (semolina-based preferred)
  • 3 tbsp unsalted butter
  • 4-5 garlic cloves, minced
  • ½ tsp red chili flakes (optional)
  • 2 tablespoons of thinly sliced onion
  • Zest and juice of 1 fresh lemon
  • ¼ cup real Parmesan cheese, grated
  • ½ cup heavy cream
  • A handful of freshly chopped basil (for garnish)
  • Salt and black pepper to taste

Instructions

  1. Cook your pasta in a large pot of heavily salted water according to the box directions. Right before draining, scoop out 1 cup of starchy pasta water and set it aside. Drain the pasta.
  2. Melt the butter over low-medium heat in a Dutch oven or large skillet. Stir in the minced garlic, onion, chili flakes. Cook for 1 to 2 minutes until fragrant (don't let the garlic brown).
  3. Transfer the cooked pasta and heavy cream into the pan. Toss vigorously to coat. If the sauce feels too thick, splash in a little bit of your reserved pasta water.
  4. Stir in the lemon juice, zest and grated Parmesan, tossing until the cheese melts into a glossy glaze. Season with salt, pepper, and fresh basil. Serve immediately with extra cheese if you like living large.

Notes

  • Add the cheese in small sprinkles while tossing the pasta, rather than dumping it all in one spot. Dumping it at once causes the cheese to clump into a stubborn ball instead of melting smoothly into the cream.
  • Warm your serving bowls in the oven or under hot water for a minute before plating. Creamy pasta sauces cool down and thicken up incredibly fast once they hit a cold plate.
  • If you ever over-reduce the sauce and it starts looking oily or separated, turn off the heat completely and vigorously whisk in one tablespoon of cold butter to snap the emulsion back together.
