Beef and Cheddar Hand Pies – Simple comfort food in a golden crust!
These beef and cheddar hand pies are little pockets of flavor joy. Flaky pastry lovingly enveloping savory, juicy roast beef with melty, gooey cheddar cheese.
Is my description corny? Possibly, but let me tell you I’m not playing around when I say these savory meat hand pies are stinkin’ delicious!
And best of all? Make a batch of them because they freeze beautifully, and they’ll become a quick and easy dinner with a side, a fun on-the-go snack, a midnight munchie after a night out.

If you know me, you know I love making hand pies. All kinds, actually. I’ve got Sweet Cherry and Sour cherry ones for desserts, a yummy chicken and asparagus hand pies for spring, and possibly one of my most fave fruit combos – strawberry rhubarb – because you know, fruit deserves a buttery blanket too!
So these beef and cheddar hand pies would jump into the group with the rest of them. Made with leftover 3 packet beef pot roast recipe, cheese, and some of my favorite flavored cheese (Boursin), and the whole combo just sings!
Corny again? Yep, I get it. But you’ll see what I mean when you make these!

- Pie dough (2 rounds)
- 8 oz leftover roast beef, shredded
- 4 slices sharp cheddar cheese
- 4 tablespoons garlic & herb Boursin cheese
- 1 egg (for egg wash)
- Sesame seeds (optional)

- Pie Dough – Puff pastry for a puffy, flaky crunch.

- Lay out pie dough rounds and cut into sections.
- Spread the cheese on each quarter.
- Top with shredded roast beef, then a slice of cheddar.
- Place a second section over the filling.
- Seal and crimp.
- Brush with egg wash, sprinkle sesame seeds.

The Freezer Plan
Storage:
- Cool completely.
- Place pies on a baking sheet, freeze until solid.
- Once frozen, wrap individually in plastic wrap, then foil.
- Keeps up to 3 months.
Reheating:
- From frozen, bake at 350°F for 25 – 30 minutes until heated through. Tent loosely with foil if the tops start browning too fast.
- From thawed, reheat at 350°F for 15 minutes.
- Microwave in a pinch, but you might lose the flaky crisp factor.

Beef and Cheddar Hand Pies Recipe
Flaky pastry stuffed with roast beef, sharp cheddar, and garlic-herb Boursin. Freezer-friendly, handheld comfort food.
Ingredients
- 8 ounces Beef Roast, shredded
- 4 Slices Cheddar cheese, sharp
- 4 Tablespoons Boursin cheese, room temperature
- 2 Pie crusts, thawed
- 1 Egg + a splash of water for egg wash
- Sesame seeds (optional)
Instructions
- Preheat oven to 375°F. Line a baking sheet with parchment.
- Cut each dough round into 4 quarters (8 total).
- On 4 pieces, spread 1 tbsp Boursin.
- Top with beef and a slice of cheddar.
- Slightly roll the remaining 4 pieces to fit, and place over the filling.
- Brush edges with water, crimp with a fork. Cut 3 slits in tops.
- Brush with egg wash, sprinkle sesame seeds if using.
- Bake 20–25 minutes until golden brown.
- Cool slightly before serving.
Notes
Freeze fully baked pies: wrap in plastic + foil, then into a freezer bag. Keeps for 3 months.
